This literature review provides the academic foundation for the Foodscapes project. It examines research on nutrition transition, food environments, urbanisation, public health, and cultural change in Vanuatu and the wider Pacific region. The review helps situate observations from Port Vila within broader discussions about food security, nutrition, globalisation, and the social meanings of food. Together, these sources offer context for understanding how everyday food practices connect to larger economic, cultural, and health transformations.
